Abstract


Abstract

The work reports the comparative analysis of the nutritional contents of the fresh stem exudates and the dried pulp of the root of cissuspopulnea (okoho) with the view of recommending to the consumers of this plant the best part to be consumed. The samples of the stem and root were prepared using sun drying method and pulverized into fine powder. The proximate analyses of the samples were determined. The mineral content screenings, iodine value as well as the anti-nutrient contents were also established. The findings established the presence of Iodine value, anti-nutrient, mineral content as well as physicochemical properties in both the stem and root samples. The consumers are advised to adopt the use of the stem part  in soup making due to its high Iodine value, thereby avoiding the problem of goiter, a deficiency disease.
